For Royal Icing
4 TBSP Vegan Meringue Powder
2/3 Cup water
1tsp Vanilla
1 tbsp Corn Syrup (for shine and optional)
1kg Icing Sugar
Whisk water and meringue powder until slightly frothy, add vanilla and Icing Sugar. Mix until incorporated and add Corn Syrup. Then whisk on high for 2-3 minutes or until white fluffy Royal Icing is achieved.
colour and water down like traditional Royal Icing.
Swiss Meringue Buttercream
5-6 TBSP Vegan Meringue Powder
3/4 Cups Water
1/2tsp Cream of tartar
1lbs Vegan Butter ( we suggest Blue label Becel block)
1-2Tsp vanilla or fave flavour
1/2-1 c Powdered sugar
Whisk Vegan Meringue Powder and water together with the cream of tartar on high until stiff peaks. Switch to Paddle attachment and Slowly add Vegan room temp butter(or just before room temp) one piece at a time until the whole block is in. Keep mixing until you get smooth silky buttercream and then add Vanilla or flavour & powdered sugar (to taste) Usually 2ish minutes until silky smooth.
