Vegan Gluten Free Vanilla Sugar Cookie
This soft chewy (not dry or crumbly) Vegan Gluten Free Cookie recipe is one of my favourites. I created this recipe because my daughters developed a wheat and dairy allergy. (This recipe is completely different from the Chocolate)
I personally prefer this recipe to traditional sugar cookie recipes because even without the Gluten, Eggs and Dairy there is no taste or texture change. I have customers who personally order these over regular sugar cookies because they prefer the smooth taste.
There is no Chia or Flax (see my Pro Tips in the recipe on why using these are HORRIBLE for your cookies) no silly ingredients that will have you running to every store.

I love this recipe. I don't eat gluten-free, but I have lots of family that does and we've tried tons of cookie recipes over the years. This one outshines them all. The flavour and texture are nothing like what you'd expect a gluten-free cookie to be—there's no grit, it's not overly dry, no weird aftertaste. And it's a dream to work with.
